This extremely rare, unique and delicious coffee is a Single Estate coffee from the Wallenford Estate, which is one of the most mature coffee farms in Jamaica being active since the year 1760. I think the senses have such a powerful connection to prior memories or future goals; I literally bought a car a number of years ago because the smell of the leather reminded me of a dear friend, I mean I also needed a car at the time, but selecting that particular car over other options was decided simply by the smell inside the car. Based on personal experience when I start creating a profile to roast a coffee to, I mentally assign the coffee a personality and roast to that personality. This particular coffee in packed in high quality barrels (there's a photo of it on our roaster on this product page, I was very exited to get this roaster last year and my excitement hasn't dwindled one bit since as it's the first fully electric P12 in Australia by Probat), so I instantly thought of wine and whisky, from those initial thoughts it reminded me of the Country Club in TV series Yellowstone, so I lent into that personality and created a profile to bring out an aroma and mouth feel/body that aligned with vibe. The aroma has strong salted caramel and sweet milk chocolate notes, with subtle undertone of sweet brown spices, Oak and Leather; don't worry you won't think this tastes like leather haha just like a wine or whiskey is has the subtle aroma of leather and oak it a wonderful way, it's like the amazingly relaxing experience of sitting in front on an open fire inside while watching it snow outside. This absolutely delicious coffee has one of the best mouth feels/body of any coffee I've roasted in such a diversified way. As a filter it has a medium body with an aftertaste that just vanishes like magic. As an espresso it's is wonderfully creamy/buttery and so smooth with one of the most glorious crema I've seen on an espresso, as it dances as you move the cup the espresso just glides off the cup walls like like one of those waterwall fountains, it's truly mesmerising. As a milk based coffee like a Latte (this is the first light omni roast I've ever recommended for milk based coffee as well as black coffees), it's basically like a Fantail Lolly (so caramel and chocolate sweet) but in a way you would not feel like you've had too much sugar by going in for a second helping. This is the type of coffee that is right at home in majestic surrounding and really connects one with nature; I don't mean in a spiritual type of way, I mean connect in a way where you think "wow what I'm seeing is so special" like seeing the Northern Lights, Niagara Falls or a 400 year old tree, anything in natural that put into perspective what a small part we play in a larger world
